Cold Shrimp Remulad Sakowitz
2 - Cups Mayonnaise
½ - of an avocado, mashed
1 - Tbl Anchovy Paste
3 - Tsp Horseradish
3 - Tsp Grained Dijon with wine
2 - Tbl Dill
1 - Large Garlic Clove – pressed
Salt and Pepper
Tobacco…. To taste !
2 - Lbs Poached Large Shrimps
Poach the shrimps till just cooked. In a collectable mixing bowl mash the avocado, then add the mayonnaise and other ingredients until you have a non traditional Remulad Sauce. If desired, add a few shakes of Tabasco . Now, to get the true colors of this beautiful dish toss the greenish delectable sauce over the pinkish shrimps and chill until set. Then, mound this dish on a pile of butter lettuce and top with your favorite crunchy topping, like crisp bacon, or buttered bread crumbs. Another thought could be shredded Belgium Endive or sautéed shallots.
