Beverage - A Recipe ..... For You !



Frozen Bananna Punch !

This is a great punch recipe that is good straight or spiked as well.  WHen you have a large function that you do not want to have beer, wine or an open bar at make this mixture and you will have a hit on  your hand. Spike it with your favorite light rum and you will make the drinkers in the room. Just make sure that you lable the punch bowls, or pitchers so only adults get the spiked version !  It is easiest to freeze the punch in washed out paper quart sized juice or milk containers. We save them year round in the attic until we need to make punch!

                  empty and washed paper quart sized milk or orange juice containers                 
6     cup     water
4     cup     sugar
5     ea       very ripe bananas
2     ea       juiced lemons
1     14oz   can or bottle of pineapple juice
1     12oz   container frozen orange juice concentrate
2     liters   Gingerale or sparkling water

Gently boil the water and sugar until you get a simple syrup, about 3 to 5 minutes but no longer as you do not want a caramel. Let the syrup cool.  Mash the bananas and add to the cooled syrup along with the lemon and pineapple juices along with the orange juice concentrate. Place the mixture into the paper cartons, fold them closed and freeze for at least 6 hours or until frozen rock hard.

To serve remove a punch block from a container. The paper containers work best here as you can just rip them off whi they are still frozen hard. Once you have the punch block in your punch bowl mash the block into a thick sluch with a wooden spoon. This it with as much gingerale as you like, keeping the mixture slushy, allowing the bananna flavor to come through. If you want you can boost the taste with some banana extract.  Yum !
