A Recipe ..... For You !

If you want an unusual but tasty cold shrimp salad this one is it.  My friend, Terry Costa passed this recipe on to me after much testing and tasting.  Terry said she used to buy this salad years ago when she lived in Houston. A local department store sold it in their restaurant.  Missing this dish, Terry and her daughter worked to recreate the recipe with great success. Make it in advance so the flavors marry and serve it over crisp butter lettuce.

Cold Shrimp Remulad Sakowitz

2  -  Cups        Mayonnaise
½ -                   of an avocado, mashed
1  -  Tbl           Anchovy Paste
3  -  Tsp          Horseradish
3  -  Tsp          Grained Dijon with wine
2  -  Tbl           Dill
1  -                   Large Garlic Clove – pressed
                        Salt and Pepper
                        Tobacco…. To taste !
2  -  Lbs          Poached Large Shrimps


Poach the shrimps till just cooked.  In a collectable mixing bowl mash the avocado, then add the mayonnaise and other ingredients until you have a non traditional Remulad Sauce.  If desired, add a few shakes of Tabasco.  Now, to get the true colors of this beautiful dish toss the greenish delectable sauce over the pinkish shrimps and chill until set. Then, mound this dish on a pile of butter lettuce and top with your favorite crunchy topping, like crisp bacon, or buttered bread crumbs.  Another thought could be shredded Belgium Endive or sautéed shallots.

Serves 8 – 10 extremely happy guests !!!
