With the Superbowl happening in two days, the two teams playing in Arlington, Texas at Cowboy Stadium it only seems fitting that we all make "Texas Caviar!" Southerners always have this dish at NewYears for good luck but when I think of Dallas I think of Queso made with Velveeta Cheese and Rotel Tomatoes, Fried Green Tomatoes, Brisket, Chips and Hot Sauce, oh there are so many foodstuffs that remind me of Texas ! But no good caterer could not be called a Dallas caterer without serving "Texas Caviar," or Black Eye Pea salad. Make this the day before serving, let it marinate overnight and you have a winner. The best thing about this recipe ...... you can adjust, change and add anything you want to enhance it! If you like Black Eye Peas ...... well .... YUM Y'all !
